VIDEO Recipe: Basic Corn Muffin Mix (gluten free & chocolate filled!)

 
For the dry mix you need:
2/3 cup gluten free all purpose or cake flour (I use Dr. Schaer Mix C)
1/2 cup yellow corn meal
3 Tablespoons sugar
1 Tablespoon baking powder
Pinch salt

Combine with wet ingredients:
2 Tablespoons Oil
1 egg
1/3 cup milk

Add 1 cup chocolate chips if you like (Nestle/TraderJoe's are GF).

  1. what was the oven temp & cooking time for these muffins? i've been wanting to make these exact muffins for a while.
