Celiachelper is back!

Hey everyone! For the last two years not much has happened on the Celiachelper blog... a recent trip to New York is one of the main reasons why I have decided to start blogging again, more on that some other time! Hopefully there will also be enough time to maybe get back on making more videos for the GlutenFreeVideo YouTube channel. A few product and restaurant reviews will be posted throughout the next following weeks, along with a couple fun summer recipes. I am really excited to be back and can't wait to get started. Until then, here's a little preview....

Land O'Lakes gluten-free recipes!

Land O' Lakes Gewy Chocolate Chip Cookies
If you've been following me on Twitter you will already know that I have been very intrigued by the gluten-free recipes on the Land O'Lakes website. Most of the recipes have very easy-to-follow directions and the ingredients are more than reasonable. 
They even offer a gluten-free flour blend suggestion: "To make flour blend, combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Use appropriate amount for recipe; store remainder in container with tight-fitting lid. Stir before using."
After preparing the flour blend you can start making recipes like Gewy Chocolate Chip Cookies, Dark Chocolate Lava Drops (they look amazing), Marble Snack Cake, Lemon Butter Bars or even Snickerdoodles.

Couple donates $45 million for celiac research!

This is so amazing! A couple, Ken and Sheila Cafferty, generously donated $45 million to the University of Maryland School of Medicine. Sheila suffers from celiacs disease herself.
This gift will help expand the University of Maryland Center for Celiac Research and study other autoimmune disorders such as multiple sclerosis and Type 1 diabetes.

Scientists Have Discovered The Causes of Celiac Disease

Researchers discovered gluten was an environmental cause of celiac disease 60 years ago.
"In the years since, the holy grail in celiac disease research has been to identify the toxic peptide components of gluten, and that's what we've done," Anderson said. "It changes the way that we understand celiac disease."

AIRHEADS not gluten free

Haven't had an airhead since the 8th grade. Recently I wondered if they were gluten free, because I kept reading about them on other blogs and seen it on a few gluten free food lists. However, the airhead website warns that they are "manufactured in a facility that processes wheat flour." 

Probably try to avoid them, because cross contamination is very LIKELY.

RUBY TUESDAY ALLERGY INFO MENU MARCH 2010


I am very impressed by the monthly allergy update RUBY TUESDAY provides for their customers. For about a year I've been trying to avoid fast food chains, period. Risk of cross-contamination just doesn't seem worth getting sick for 3-4 days. No thanks. So far, I don't actually miss it much. 
Worst case will be getting some fries from McDonald's....

VIDEO Recipe: Basic Corn Muffin Mix (gluten free & chocolate filled!)

 
For the dry mix you need:
2/3 cup gluten free all purpose or cake flour (I use Dr. Schaer Mix C)
1/2 cup yellow corn meal
3 Tablespoons sugar
1 Tablespoon baking powder
Pinch salt

Combine with wet ingredients:
2 Tablespoons Oil
1 egg
1/3 cup milk

Add 1 cup chocolate chips if you like (Nestle/TraderJoe's are GF).

Jiffy Corn Muffin Mix: the delicious gluten free version (with chocolate chips)

Just found this copycat Jiffy Corn Muffin Mix recipe on recipesecrets
Switched the all purpose flour for gluten free cake flour (by Dr. Schar) and stuck to the rest of the directions. 
The result are these delicious gluten free chocolate chip corn muffins.
